May 26, 2018 - I arrived at the following solution to wrapping my springform pan in tin foil for the Bain-marie (water bath). I placed the cheesecake pan into a plastic crockpot liner, which I transferred to the roasting pan, and added hot water. The pan stayed nice and dry. When it was time to remove the pan from the hot water, I grasped the liner to lift the cheesecake out of the water and on to the cooling rack. Pretty slick, if I do say so myself.
